In making the savory ham and cheese cake, start with blending together eggs, oil, salt, milk, wheat flour, and cornstarch. Mix lightly, then add in baking powder and stir mildly. Pour half of the batter into a greased and floured mould, layer it with ham, mozzarella and tomatoes. Spread the leftover batter over this and sprinkle the top with grated mozzarella, chopped tomatoes, chopped green onions, and oregano. Bake it in a pre-heated oven at 180°C for about 40-45 minutes. For the cake

  • 1 and ½ cup (tea) of room temperature whole milk
  • 1 cup (tea) of cornstarch
  • 1 cup (tea) of unfermented wheat flour
  • ¾ cup (tea) of oil
  • 3 whole eggs
  • a pinch of salt 
  • 1 tablespoon of chemical baking powder

For the filling (optional)

  • 55g chopped seedless tomatoes (reserve some for the final)
  • green onions chopped (to taste)
  • oregano (to taste)
  • 150g shredded ham
  • 150g shredded mozzarella (save some for the final)

Note: The cup measure is 240ml.

Preparation method

The cake/filling

  1. In a blender, add eggs, oil, salt, milk, wheat flour, and cornstarch.
  2. Blend quickly, just to mix together.
  3. Add the chemical baking powder and mix with a spoon, without beating. The dough is liquid, and that’s okay.
  4. Generously apply butter or margarine and sprinkle flour into a rectangular mould (20cm x 30cm x 4.5cm).
  5. Pour half the batter into the mould and spread the shredded ham, shredded mozzarella, and chopped tomatoes.
  6. Cover with the remaining batter and sprinkle: shredded mozzarella, chopped tomato, chopped green onions, and oregano.
  7. Bake in a pre-heated oven at 180°C for about 40-45 minutes.
  8. Remove, serve, and savor your tasty savory ham and cheese cake!
