Would you like to know my most frequently made pudding recipe? It has to be the Pudim Caça-Marido, a recipe I learnt from my aunt. The name might seem peculiar, but believe me, this is one of the best puddings you’ll ever try! Today, you’re going to discover how to make Pudim Caça-Marido with condensed milk – it’s a simple recipe.

Preparation Time: 120 Minutes
Yield: Serves 20 people

REQUIRED INGREDIENTS

  • 1 cup of sugar for caramel
  • 1 liter of milk
  • 4 egg yolks
  • 5 tablespoons of cornstarch
  • 1 can of condensed milk
  • 1 tablespoon of vanilla essence
  • 4 egg whites
  • 1 cup of sugar
  • Lemon zest

The preparation steps are quite straightforward. If you follow the instructions carefully, you’ll make a fantastic Pudim Caça-Marido!

PREPARATION PROCEDURE

  1. In a saucepan, add the sugar and heat while stirring consistently for about 5 minutes, or until it melts into caramel. Then, spread this caramel onto a 30 cm diameter pudding mould and set aside.
  2. In a different saucepan, add the milk, egg yolks, cornstarch, condensed milk and vanilla. Heat and stir consistently for around 10 minutes, or until thickened. Then, pour this into the caramelised mould and set aside.
  3. Use a mixer to beat the egg whites into a foam and add the sugar, beating continuously until it forms a firm meringue. Then, mix in the lemon zest and spread this over the pudding in the mould.
  4. Next, bake in the oven for about 10 minutes until the meringue turns golden brown. After this, remove from the oven and refrigerate for 4 hours. Finally, remove from the mould and serve.
